The Santo Niño de la Bola cooperative (Bodegas Taray) was established in 1962 with the aim of acquiring the grapes from its 95 partners for subsequent production and sale.

Activity began with a total production of around 6,000,000 kg grapes, practically all of which were white varieties. Currently, in the region of 25,000,000 kg are collected (depending on the harvest), supplied by the 700 partners that now make up the cooperative.

Investments have been made in the bodega (the winery) to improve cooling equipment, stainless steel and self-emptying vats of various capacities, as well as a pneumatic press, all with the clear aim of improving the quality of the final product and geared towards marketing quality wine, bottled or by the liter.

Bodegas Taray, Santo Niño de la Bola, Sdad. Castilla La Mancha Cooperative is located in the Las Mesas locality, in the southwest of the province of Cuenca. The municipal area of Las Mesas covers a surface area of around 8,500 hectares. It is contained entirely within Cuenca´s natural area in the La Mancha region, in the heart of the meseta manchega, and is characterized by extensive plains with little in the way of woodland but very favorable for vine cultivation. The distance to Madrid is 175 km, Valencia is at 230 km and Alicante is at 260 km.

Over the 12,000m2 surface area, of our facilities we accommodate a production and storage capacity of 25,000,000 kg of grapes, with an average production of 20,000,000 kg of grapes.

We also have 105 French oak barrels and capacity to increase this number significantly. All of the production and storage vats are of stainless steel with cooling sleeves in order to control production meticulously in terms of temperature.

Filtration:

We have a centrifuge for the most rudimentary cleaning of the wine, with a capacity of around 10,000 to 12,000 liters/hour, depending on the impurity.

We have two earth filters, one of 3 m2 to filter the wines coming out of the cooler and a 20 m2 for large quantities with an approximate performance of 35,000-40,000 liters/hour.
